Cabbage is an incredible green, leafy plant, which is popularly used for coleslaw and in Polish dishes. For women especially, Brassica family vegetables can help reduce the risk of breast cancer. In addition, green cabbage is an excellent source of vitamins K, C, B6 and A, and it also contains calcium, potassium, protein and dietary fiber. So why aren’t you making the most of your backyard cabbage potential?
There are several types of cabbage: green, savory, napa, bok choy and red. Green cabbage is a great way to start, because it can be incorporated into so many dishes. Obviously, you can shred cabbage and carrots and add some mayonnaise to make coleslaw, but you can also sauté it for a completely different flavor.
Green cabbage can be a beginning for any stir-fry. You can sauté the cabbage along with sweet onions, squash, green peppers and any other of your favorite vegetables. Then you can add a little soy sauce and sweet sesame teriyaki sauce for an Asian flavor. If you want a heavier meal or more protein, put the stir-fry on top of brown rice or place it in a toasted wheat roll.
Another way to prepare the green cabbage is to create stuffed dough squares. All you need is the noodle dough squares or phyllo dough squares. Then you can shred the cabbage, cut up tofu and season with salt and pepper or soy sauce. After you create stuffed triangles, just sauté them in a pan until brown.
